Cat felt like baking today!
But Cat was dismayed to see: Your search - "hufflemuffins recipe - did not match any documents!
So Cat decided to make her own!
Behold, Cat's Unofficial (in no way shape or form authorized by Madam Helga Hufflepuff or Professor Pomona Sprout) Banana-Nut-Choco-Carrrot-Raisin-Spicy Hufflemuffins (plus frosting)!


This recipe makes about 8 medium-size muffins and is liberally borrowed from an old banana-muffin recipe my mom makes. :)
You'll need:
2 ripe bananas (yellow pride!!)
1 tsp vanilla (though we're anything but!)
1.5 tsp cinnamon (bc we badgers can be spicy, amirite?)
Put this all in a blender/food processor until it's puree'd good 'n mushy, then add
2 Tbsp chopped golden raisins (ok, purple raisins work fine too, but golden = more yellow!)
1/3 c chopped almonds (My mom says walnuts taste better, but I'm kinda allergic to walnuts, so almonds it is!)
1 chocolate bar chopped (ok, chocolate chips would be easier and probably work just fine, but it wouldn't be a Puff recipe without a little bit of hard work!)
1/3 c grated carrots (recipe overload? no way! we take 'em all! :D)
.5 cup veggie oil
1 egg
Mix together until *just* combined. Don't over mix or you may face tough muffins! :o
In a separate bowl, sift together:
1 c sugar
1.5 c flour
1.5 tsp baking powder
1/4 tsp baking soda
pinch of salt
Then mix both bowls until *just* combined. Again, don't over mix or they could get tough!
Bake at 350 for 30-35 minutes. To be sure they're done, poke a toothpick in one. If it comes out clean, you're good to go!
These cupcakes are super sweet and good alone, but the 'ol cream cheese icing kinda takes these things to the next level of awesome and I recommend trying it.
You'll need:
1/3 cup butter
1 cup cream cheese
3/4 cup powdered sugar
1/2 tsp vanilla
Whip butter and sugar then add cream cheese and vanilla! Easy (it takes a lotta patience if you're doing it sans mixer, though)!
Top as desired!
I'm using chocolate-candy covered sunflower seeds here.
